As summer winds down, my jalapeño plant has been producing peppers like crazy so I have a lot of jalapeños to use so why not a good salsa! You can use this recipe to make this salsa your own way with lots of options for substitutions depending on what you have available and how spicy you want it.

Ingredients:
- Tomatillos (about a pound)
- Jalapeños (depends on how spicy you want it, I used 3 and mine was pretty spicy)
- Serranos (I used one of them, but you can sub for habanero, add two, or skip all together if you don’t want as much spice or your jalapeños)
- Garlic, don’t peel (4-5 cloves depending on how much garlic you want)
- 1 white onion, cut in half (mine was small)
- Juice of about 1 lime
- Handful of Cilantro
- Salt & pepper
Preheat the oven to 350 degrees and put tomatillos (keeping the husk on), the onion, garlic, and 2 jalapeños (or 1 if you want less spice) on a baking sheet. Drizzle some olive oil over all of it along with salt and pepper. Put in the oven for 15-30 min, or when you start to see some browning on the tomatillos.
Peel the husk off of the tomatillos and garlic and put in a food processor or blender, add the onion, jalapeño, serrano, cilantro, lime juice and handful of cilantro. Blend everything together in the food processor or blender. Taste and season with salt and pepper if needed and add more jalapeño or serrano if needing more spice.
Eat with a taco or with some tortilla chips.
