Crispy Pork Belly Bowl

I have been working on cleaning out my freezer and pantry recently so I can have a clean slate the next time I grocery shop! I had forgotten that on my last trip to Trader Joe’s I bought two packs of pork belly – and let me tell you, they did not disappoint (even after being shoved to the back of my freezer for months).

One of the best things about this dinner is that it can be changed in so many ways, different protein, different starch, and any array of vegetables. I love meals that can easily be adapted into whatever I have currently available.

  • Protein (I used Trader Joe’s Pork Belly)
    • Chicken, ground pork, ground beef, ground turkey, tofu… really anything you have in your freezer would work!
  • Rice noodles – this is the kind I used
    • You could also use rice
  • Fresh veggies (I had cucumbers, radishes, carrots, green onions, micro greens, and jalapeños in mine)
    • Use any veggies that you have available/ want to get rid of
  • Pickled Vegetables
  • Siracha mayo
    • Two to three spoonfuls of mayonnaise – Kewpie is the best!
    • Sriracha (more or less depending on how spicy you want it, I put about 3 good squeezes in mine)
    • A couple dashes of soy sauce
    • Taste and adjust as needed

Cook the protein any way that you would like, I cut the pork belly into strips and pan fried it until it was super crispy. I seasoned it with a little bit of salt and that was it.

If you want to use another protein, cook it with some soy sauce, or just salt and pepper – whatever your preference is.

Cut up all of your veggies, cook your starch, and make your sriracha mayo.

Assemble everything together and enjoy!
