Pickled Vegetables

I use this for all my pickling needs!

I will admit that I did not like many pickled items before I started doing them this way. Another plus, it takes less than a minute to put the pickling liquid together and the only other part of it is deciding what veggies to use and cutting them up!

Ingredients:

Mix equal parts water with vinegar, I do mostly red wine vinegar with a tablespoon or so of rice wine vinegar for a little sweetness.

Cut up your vegetable(s) and let them soak in your pickling liquid for a few hours up to two weeks in your fridge.

Here are some of my favorite veggies to pickle

  • Red Onions
  • Jalapeños
  • Cucumbers
  • Carrots
  • Radishes
  • Cauliflower

I will use these veggies on just about anything if I need a little brightness so I almost always have pickled veggies on hand. Some of my favorite ways to use them are:

  • On top of buffalo chicken (or cauliflower) Mac and cheese
  • On a taco or nachos
  • Salads
  • Vietnamese wraps
  • Falafels
